Taco Hombre expands with second restaurant in Vernon, N.J.

VERNON, N.J. — On Jan. 8, Vernon Mayor Vic Marotta and members of his administration, along with representatives from the Vernon and Warwick chambers of commerce, joined Chad Wieber and Bo Kennedy for the official grand opening of their second “Taco Hombre” Mexican restaurant.

Taco Hombre, which first opened last year on Main Street in the nearby Village of Warwick, has been a success story. It seemed only natural that the same basic formula would work just as well in Vernon’s Mountain Creek Ski Area, which is New York and New Jersey’s closest ski resort to the Metropolitan area.

The new Taco Hombre, located in Mountain Creek Village, sits alongside the path taken by thousands of skiers and snow boarders on their way to the slopes.

The extensive menu features tacos, burritos, quesadillas, salads and much more.

“Just as we do in Warwick,” said Wieber, “we use the freshest ingredients and our specialties include marinated skirt steak, marinated chicken, mahi-mahi, shrimp and slow cooked pork. Our tamales, made every week, are also on the menu as well as fresh Pico de Gallo and guacamole made all day every day.”

Wieber and Kennedy have been longtime friends and lifelong residents of Warwick. During and after their college years they both spent time in the Western part of the United States and traveled to Mexico, mainly the Northern Baja region, where they discovered the delicious tastes of Mexican food.

Taco Hombre at Vernon is open daily during the ski season and in the warmer weather when the Water Park is in full swing.
