WARWICK — It was somewhat cooler than normal for this time of year on Sunday, March 29.
However, guests dressed for the occasion and enjoyed blue skies and bright sunlight as Warwick resident Pat Gallagher, owner of Gallagher Solar Thermal, held a party in his back yard, complete with music and refreshments, to celebrate the annual tapping of his maple trees.
Gallagher explained that although tapping maple trees is not difficult, it takes about 40 gallons of sap, which has to be boiled down and filtered, to produce one gallon of syrup.
