Annual maple syrup party

On Saturday, March 2, Warwick resident Pat Gallagher, owner of Gallagher Solar Thermal, threw a party in his back yard with live music and refreshments to celebrate the annual tapping of his maple trees. Gallagher explained that although tapping maple trees is not difficult, it takes about 40 gallons of sap, which has to be boiled down and filtered, to produce one gallon of syrup. The final product is placed in small jars, which he distributes among friends.
